Collagen Booster Raspberry Lemon Bars (Keto Recipe!)

If you have a craving for something sweet and a little tart then these raspberry lemon bars are the perfect option to whip up! If you are following a keto diet these are perfect. We also never miss an opportunity to give our treats a boost with skin loving benefits so we added in two scoops of Collagen Booster to support heathy skin, bones, and joints!

If you are not doing keto then you can substitute in regular sugar and dairy milk if you wish.

Crust Ingredients:

-1 1/2 cup almond flour
-1/4 cup granulated keto sugar
-2 scoops Active Wow Collagen Booster
-1/2 tsp salt
-1/4 cup unsweetened almond milk
-2 tsp melted butter

Filling Ingredients:
-1 1/4 cup raspberry puree (it's easy and takes just minutes!)
-5 eggs
-2 tops liquid stevia 
-3 tbsps corn starch
-1 tbsp natural red food coloring
-3/4 cup lemon juice

Crust Instructions:

  1. Preheat oven to 350F and line an 8x8 pan with parchment paper. 

  2. Whisk almond flour, collagen booster, sweetener, and salt in a bowl. 

  3. In a separate bowl, stir the almond milk and butter. Combine with dry ingredients. 

  4. Press into pan and bake for 30 min. 

Filling Instructions:

  1. Blend 12 oz of raspberries, then drain out the seeds with a sifter. 

  2. Add raspberries, eggs and stevia to a mixer and beat until smooth. 

  3. Whisk in corn starch, lemon juice, and food coloring. 

  4. Pour over the crust and bake for 25 min until no longer jiggly. Enjoy!

Recipe makes 16 bars. Serving is 1 bar: 100 cals / 7g Fat / 6g net carbs
